Gazpacho with Seafood

Gazpacho

 

This Spanish raw soup is served cold or room temperature, you do not cook or heat it. It is refreshing on a hot day, super low in calories and loaded with nutrition.

 

Ingredients:

  • 1 English cucumber (cut off 1" on each end, ends of cucumber are bitter)
  • 2 Red bell peppers - cored and deseeded
  • 4 Plum / Roma tomatoes
  • 1 Red onion
  • 3 Garlic cloves
  • 1 - 2 Jalapeños - cored and deseeded
  • 23 oz Tomato juice (3 cups) (get a natural preferably organic one)
  • 1 lb of Seafood (flake-style imitation crab meat or cooked shrimp or cooked crab meat works well here)
    • Since this is a raw soup, make sure your seafood is precooked, imitation crab is precooked
  • 3 Tablespoons Cilantro
  • 1/4 Cup White wine vinegar (some prefer red wine vinegar)
  • A Splash of Lime juice
  • 1/4 Cup Organic extra virgin olive oil
  • 1/2 Tablespoon natural sea salt
  • 1 Teaspoon fresh ground black pepper

 

Calories Per Serving 175 calories

  • 1 English cucumber = 10
  • 2 red bell peppers = 60
  • 4 plum tomatoes = 100
  • 1 red onion = 40
  • 3 garlic cloves = 30
  • 2 japapeños = 8
  • 23 oz tomato juice = 130
  • 1 lb imitation crab meat = 430
  • Cilantro = 0
  • 1/4 cup white wine vinegar = 0
  • Lime juice = 0
  • 1/4 cup olive oil = 480
  • Total Calories = 1288
  • Assuming about 7 servings = 175 calories per serving

 

Directions:

  1. Finely chop cucumbers, bell peppers, jalapeños, tomatoes, red onion and garlic cloves. I like to medium chop them and then use a salad chopper like the Slap Chop. You want the pieces to be just smaller than a green pea... don't over chop them too small.

  2. Combine the chopped veggies in a large bowl and add the tomato juice, lime juice, cilantro, vinegar, salt and pepper

  3. Take 1/4 of the soup into a blender and puree till smooth

  4. Add puree back to the bowl and also add the olive oil now

  5. Add the imitation crab or cooked shrimp or crab meat. Remember, this is a raw soup, no cooking so your fish must be pre-cooked. Imitation crab is pre-cooked so don't cook it.

  6. Mix well and let it sit in the fridge before eating. The longer it sits the more the flavors develop.
