Cauliflower Faux Fried Rice

Tastes just like fried rice but with much fewer calories, lower carbohydrates and much higher in nutrition.

 

Ingredients:

  • Sesame Oil x 1 - 2 tablespoons as needed
  • 1 – 3 cups Pork, chicken or shrimp
  • 6 green onions
  • 5 – 8 cloves of minced garlic
  • 1  head cauliflower (raw and uncooked)
  • 1 – 2 tsp garlic salt
  • 1 – 2 tsp black pepper
  • 2 – 6 TBSP of soy sauce (wheat / gluten-free ideally)
  • 1 – 5 tsp Sriracha brand chile sauce (Asian aisle of supermarket)
  • 6 whole eggs beaten
  • 1 – 3 cup Frozen Mixed Veggies (carrots, peas, etc.)

Optional Ingredients:

  • Chopped snow peas, bean sprouts, water chestnuts and more

Calories Per Serving 142+/- calories!!!

  • Sesame Oil = 120 per tablespoon
  • 1 - 3 cups Pork, Chicken or Shrimp = 150+/-
  • 1 head cauliflower = 150+/-
  • 6 whole eggs = 420
  • 1 - 3 cups frozen mix veggies (carrots, peas) = 300+/-
  • All other ingredients offered negligible calories below 15
  • Total Calories = 1140
  • Assuming 8 large servings divided by 1140 = 142 calories per serving!!!

 

Directions:

  1. Grate cauliflower using the large holes of a cheese grater (careful with your fingers) or use a food processor.

  2. In a wok or large pan, heat enough oil to cover bottom of pan.  Cook meat with black pepper till just done push to side of wok or remove from pan.

  3. Fry minced garlic and onions for approx. 1 min. 

  4. Add grated cauliflower and fry for approximately 5 min, stirring constantly (don’t let it turn to mush). 

  5. Add soy sauce, garlic salt, Sriracha, meat and the frozen veggies including all other veggies and stir for 1 minute.

  6. Push mixture up side of wok or remove from pan. 

  7. Add more oil if necessary, and scramble eggs in bottom of wok/pan. Cook until done but still moist. 

  8. Chop the scrambled eggs as you mix everything together in wok/pan stirring well then remove from heat.

  9. Add soy sauce or Sriracha as desired.
