Asian Bok Choy

By Brian Copeland

This great side dish tastes just like the boy choy at the Chinese buffet, except you know exactly what is in it. It is healthy and super low calorie.

Ingredients:

  • 4 - 6 cups of baby bok choy
  • 1 - 2 tablespoons of organic toasted sesame oil
  • 1 - 5 cloves of garlic, minced
  • 2 tablespoons of water
  • 1 tablespoon of organic soy sauce (gluten/wheat-free Tamari is even better)
  • 1/2 teaspoon of organic raw sugar
  • 1 tablespoon of chili sauce (I use chili garlic sauce with the green lid but Sriracha brand will work too)

Calories Per Serving 109 calories!!!

  • 4 - 6 cups of baby bok choy = 36
  • 2 tablespoons of sesame oil = 240
  • 3 cloves of garlic = 12
  • 1 tablespoon of soy sauce = 11
  • 1/2 teaspoon sugar = 7
  • 1 tablespoon chili sauce = 21
  • Total Calories = 327
  • Assuming 3 servings divided by 327 = 109 calories per serving!!!

Directions:

  1. Rinse the bok choy really well as it tends to be dirty

  2. Cut diagonally into 1" wide strips

  3. Heat a pan to medium heat with sesame oil

  4. Add the garlic and bok choy

  5. Stir fry about 2 minutes

  6. Add water, soy sauce, sugar and chili sauce and cook uncovered so the sauce starts to thicken

  7. When bok choy is tender yet still a little crisp it is done

  8. Serve with a protein dish
