Cauliflower Faux Fried Rice
Ingredients:
- Sesame Oil
- 1 – 3 cups Pork, chicken or shrimp
- 6 green onions
- 8 cloves of minced garlic
- 1 head cauliflower (raw and uncooked)
- 1 – 2 tsp garlic salt
- 1 – 2 tsp black pepper
- 2 – 6 TBSP of soy sauce
- 1 – 5 tsp Sriracha brand chile sauce (Asian aisle of supermarket)
- 6 eggs beaten
- 1 – 3 cup Frozen Mixed Veggies (carrots, peas, etc.)
Optional Ingredients:
- Chopped snow peas, bean sprouts, water chestnuts and more
Directions:
- Grate cauliflower using the large holes of a cheese grater (careful with your fingers) or use a food processer.
- In a wok or large pan, heat enough oil to cover bottom of pan. Cook meat with black pepper till nearly done push to side of wok or remove from pan.
- Fry minced garlic and onions for approx. 1 min.
- Add grated cauliflower and fry for approximately 5 min, stirring constantly (don’t let it turn to mush).
- Add soy sauce, garlic salt, Sriracha and meat and stir until mixed.
- Push mixture up side of wok or remove from pan.
- Add more oil if necessary, and scramble eggs in bottom of wok/pan and add veggies. Cook until done but still moist.
- Mix everything together in wok/pan stirring well and remove from heat.
- Add soy sauce or Sriracha as desired.
